Strawberry Banana Muffins

This is by far one of the easiest recipes I’ve tried so far and outside of the bananas and strawberries, I’d bet you have all the ingredients in your cabinet. Now, I’m not a chef but I love to try new recipes and one of my favorite sites is Joy of Baking.

Everything I’ve tried on this site has been absolutely marvelous. I hate nothing more than trying a recipe only to discover I don’t like it, thus wasting supplies on something that doesn’t meet my expectations. However, I don’t waste; I take it to work and put it in the coffee nook and it disappears!

This muffin is perfect as a snack or you can make them the night before and have them for breakfast. While this recipe calls for some brown sugar and due to the fact that it is a muffin it’s not very sweet (to me). So, if you want to sweeten it up a bit sprinkle some powered sugar on top or make a glaze. Also, since it calls for fresh fruit that helps to keep the muffin moist. If you like bananas and strawberries, this is a quick and easy recipe.

Strawberry Banana Muffins Recipe:

  • 1/2 cup (1 stick) (113 grams) unsalted butter, melted
  • 2 large eggs, lightly beaten
  • 1 teaspoon (4 grams) pure vanilla extract
  • 2 large ripe bananas, mashed (about 1 cup)
  • 1 cup (240 ml) fresh strawberries (cut into bite sized pieces)
  • 2 1/4 cups (295 grams) all-purpose flour
  • 3/4 cup (160 grams) light brown sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon (4 grams) ground cinnamon
  • 1/2 teaspoon (2.5 grams) salt
